Meatloaf be Jammin’

This meatloaf with pepper jelly is astoundingly flavorful and moist.

Savory and spicy meatloaf with hot pepper jelly

Ingredients:
1 lb ground beef
1/2 lb ground pork or sausage
2 large eggs, lightly beaten
1/4 c grated onion
1/3 c dried bread crumbs
1/2 c Jammin’ Jelly, divided into 1/4 c amounts
1/4 c ketchup, divided into 2 TBSP amounts
1 tsp salt
1/2 tsp black pepper
2 TBSP fresh chopped parsley or dried
1 fresh jalapeño, seeded and chopped (optional)

Preheat oven to 350F and place oven rack in center of oven.

Spray a loaf pan and a small sheet tray covered with foil with kitchen pan spray.

Combine all ingredents except 1/4 c reserved Jammin’ Jelly and 2 TBSP reserved ketchup.

Mix gently with your hands. Do not overmix. Shape loaf into a the prepared loaf pan.

Bake for 1/2 hour to set the loaf. Transfer the loaf (discarding fat) onto prepared sheet pan and coat with reserved Jammin’ Jelly and ketchup.

Bake for another 45 minutes, or until loaf reaches 160F. Let loaf rest for 10 minutes.
